Mediterranean Skewers – Party Snack

– Korvel Green Olives Pitted or Stuffed
– 20 cherry tomatoes
– 4 iceberg lettuce leaves
– 70g FetaCheese
– 70g yellow cheese
– Korvel Extra Virgin Olive Oil
– 20 toothpicks

Cooking method: 
Οpen the jar with the Green Olives Pitted/Stuffed and put them in a bowl.

Rinse well the cherry tomatoes and the iceberg lettuce leaves. Cut the leaves in small pieces.

Cut Feta and yellow cheese in small cubes and put aside.

Put in each toothpick a cube of yellow cheese,one cherry tomato, iceberg lettuce, one olive and a cube of feta cheese.

Put all the skewers in a plate and add some olive drops for extra taste.


Rice Cakes with Avocado Sauce and Smoked Salmon

– 4 rice cakes
– 100g smoked salmon
– 1 ripe avocado, chopped
– 3 tsp Korvel Extra Virgin Olive Oil
– juice from 1 lime
– salt, pepper
– chopped dill

Cooking method: 
Put the avocado, lime juice, salt, pepper and Extra virgin olive oil in a blender. Puree until smooth.

Spread the Avocado Sauce in the rice cakes.

Cut smoked salmon in 4 pieces and place them above each rice cake.

Add some drops of Extra Virgin Olive Oil and some chopped dill for Extra Taste and…

Ready to serve!

Veggie Skewer

Portions: 4

– 1 oblong eggplant, cut into 8 slices
– 1 zucchini, cut into 8 slices
– 3 colored peppers, cut into 8 pieces
– 1 large onion, cut in 8 pieces
– mustard

For the marinade:
– ¾ tea cup Korvel Extra Virgin Olive Oil
– juice from ½ lemon
– 1 clove garlic, crushed
– ½ tsp thyme
– ½ tsp oregano
– salt, pepper

Cooking method: 
Wash and dry the vegetables.

Then pass the skewers alternately and when finished, put them in a bowl and pour the marinade.

Leave them in the marinade, at least 1 hour.

Then bake the vegetables skewers on the grill until browned from all sides.

Finally, we make a mustard sauce by hitting wet mustard, KORVEL Extra Virgin Olive Oil, lemon, oregano, salt and pepper.

Pour and serve.


Traditional Greek Tzatziki Dip

– 500g Greek yoghurt
– 1 tablespoon Korvel Extra Virgin olive oil
– 1 cucumber
– 4 garlic cloves
– vinegar, ground black pepper, salt
– paprika to give extra color and taste

Cooking method: 
Clean a big cucumber and grate it.

Squeeze out the juice from the cucumber with your hands and put the cucumber into a bowl.

Grate the garlic and put in into the same bowl without squeezing it.

Add the Greek yoghurt, paprika, a tablespoon of Extra Virgin Olive Oil, some vinegar, pepper and salt.

Mix everything thoroughly.

Finely chopped dill and olives can also be added

Homemade hummus

Cooking time: 15 min
Portions: 4

– 1 can garbanzo beans (chick peas), drained (keep the liquid aside)
– 2 teaspoons ground cumin
– 1 garlic clove, crushed
– 1 tablespoon Korvel Extra Virgin olive oil
– 1 teaspoon salt

Cooking method: 
Mix the garbanzo beans (chick peas), salt, olive oil, garlic and cumin in a blender or food processor.

Then, blend on low speed, gradually adding the bean liquid that you kept before, until desired consistency is achieved.
